Hello Dolly Bars—also known as Magic Bars or 7-Layer Bars—are a fast, crowd-pleasing dessert that’s perfect for parties, potlucks, and casual summer gatherings. A buttery graham cracker crust layered with chocolate chips, butterscotch, toasted coconut and pecans, then finished with sweetened condensed milk, creates a rich and chewy bar that disappears quickly. These bars are simple to prepare, take about 5–10 minutes to assemble, and bake in under 30 minutes.

I’ve brought these bars to pool parties and holiday cookie swaps, and they’re always a hit. They’re versatile, easy to customize, and loved all year round. If you plan to keep them at home, beware—they’re dangerously addictive, and you may find yourself reaching for one (or two) too many!
Gift idea: One of the most treasured gifts I’ve received is a bound family cookbook my mother made. She compiled favorite recipes, printed them and placed them in protective sleeves in a 3-ring binder. It’s a gift I use daily and plan to recreate for my daughters someday. This Hello Dolly Bar recipe is one I’ll be sure to include.

I tested several online recipes until I arrived at this version and made a few small tweaks to suit my taste. The whole process—from crushing the crackers to layering the toppings—takes minutes, making this a great go-to dessert when time is short or when you have little helpers in the kitchen.
Hello Dolly Bar Recipe

Author: Laura
This quick and easy dessert—also called Magic Bars or 7-Layer Bars—has a buttery graham cracker crust, melted chocolate and butterscotch chips, crunchy pecans, and shredded coconut all drizzled with sweetened condensed milk. They’re chewy, sweet, and wonderfully nostalgic.
Prep Time: 10 mins | Cook Time: 30 mins | Total Time: 40 mins | Servings: about 20 bars
Equipment
- 9 x 13 inch baking pan
- Aluminum foil
- Ziplock bag or food processor (for crushing graham crackers)
- Small mixing bowl
Ingredients
- 2 cups graham cracker crumbs (about 10 crackers, crushed)
- ½ cup butter, melted
- 1 cup semi-sweet chocolate chips
- ½ cup butterscotch chips
- 1 cup pecan halves
- 1 cup sweetened shredded coconut
- 14 oz can sweetened condensed milk
- Cooking spray (for pan)
Instructions
- Preheat the oven to 325°F (165°C). Line a 9×13 pan with aluminum foil and spray lightly with cooking spray.
- Place graham crackers in a ziplock bag and crush with a rolling pin, or pulse them in a food processor until fine. Transfer crumbs to a small mixing bowl.
- Pour the melted butter over the graham cracker crumbs and stir until evenly combined.
- Press the graham cracker mixture firmly into the bottom of the prepared 9×13 pan to form an even crust.
- Evenly layer the chocolate chips, butterscotch chips, pecan halves and shredded coconut over the crust.
- Drizzle the sweetened condensed milk evenly across the top so the toppings are lightly coated.
- Bake for 25–30 minutes. I recommend starting with 25 minutes, then adding a minute or two if needed. The edges should be golden brown, the center bubbly, and the coconut slightly toasted. Watch closely—coconut can brown quickly and burn if left too long.
- Remove from oven and cool until the chocolate and butterscotch set and are no longer gooey, then lift the foil to remove the slab from the pan and cut into bars. Yield: about 20 bars.
- Store in an airtight container at room temperature for 3–4 days or refrigerate for up to a week.
Tips for perfect Hello Dolly Bars
- Press the crust firmly and evenly so the bars hold together well when cut.
- Use fresh sweetened coconut and watch it toward the end of baking to avoid burning—if the top is browning too quickly, tent loosely with foil.
- Let the bars cool enough that the chocolate chips are set; cooling time makes neater slices.
- When crushing graham crackers in a bag, remove as much air as possible before pounding for an even texture.
Variations and substitutions
These bars are highly adaptable. Swap semi-sweet chips for white chocolate, add chopped almonds or walnuts instead of pecans, or stir in raisins for a chewier texture. Some people enjoy adding Rolos or caramel pieces for an extra gooey center. Feel free to experiment—just keep the layering order the same so the condensed milk can bind everything together.
These Hello Dolly Bars are perfect for summer gatherings, bake sales, and cookie exchanges, and they make a wonderful addition to any dessert tray. Whether you’re recreating a childhood favorite or trying them for the first time, they’re simple to make and sure to become a regular request. I hope you enjoy them as much as my family does!
